Red Pepper & Sweet Potato Soup

I tweaked it a little to save time on the red pepper. The book instructs you to roast a red pepper I simply purchased one from a salad bar (olive bar) that was roasted, skin removed. You could probably buy canned red pepper with limited oil.

1 sweet potato

1/4 red bell pepper

1 cup vegetable broth or water

1 tsp finely grated giner root

1 1/2 tsp extra virgin olive oil

1 tsp miso paste, dilluted in 1 tsp hot water

Tamari or Bragg Liquid Aminos, Himalayan salt and herbal seasoning to taste.

Peel the sweet potato. Either cook in boiling water or steam it util tender.

Drain and set aside.

Meanwhile roast the red pepper on gas stove top or grill to evenly char on the outside or bake in over 400 degrees for 15-20 minutes. The point is to get the skin off of the pepper.

Put the pepper in a bowl and cover for 10 minutes to steam. Clean off the skin, remove the seeds and cool.

Cut into quarters.

(This is why I recommend buying a preskinned pepper.)

Place sweet potato, pepper, broth, water, ginger, oil, and miso in blender. Blend thoroughly, adding more liquid to achieve the thickness you like. Transfer to pot and gently warm on low until hot.

Add tamari or aminos, salt and seasoning as desired.

SERVES 1

If you want to make this in bulk simply do the math. This is a great soup for the week for lunch or an afternoon snack.
